Honey Soda Bread
Makes 1 loaf

Ingredients

cups all-purpose flour
|
|

|
cup whole wheat flour
|
|
2
|
teaspoons baking soda
|
|
1/2
|
teaspoon salt
|
|
1/4
|
cup butter or margarine, cut up
|
|
1
|
cup golden raisins
|
|
2
|
teaspoons caraway seeds
|
|
1
|
cup plain low-fat yogurt
|
|
1/3
|
cup honey
|
|
2
|
tablespoons milk
|
|
|
|
|
|
|
|
|
|
In large bowl, combine flours, baking soda and salt; mix well. Cut in butter until mixture resembles coarse crumbs; mix in raisins and caraway seeds.

In small bowl, whisk together yogurt and honey. Add to flour mixture; stir until just combined. Turn dough onto lightly floured surface; knead 10 times or until dough is smooth. Form dough into ball; place on lightly greased baking sheet. With sharp knife, cut an "X" 1/4 inch deep into top of loaf; brush with milk. Bake at 325°F for 45 to 50 minutes, or until golden. Cool on wire rack.
