Since there is about five times the amount of the Recommended Daily Allowance of vitamin A in a medium sweet potato, they are high on the list of foods that may reduce the risk of cancer.
Ingredients

cup chopped onion

small jalapeño pepper,* minced

teaspoon margarine

cups turkey broth or reduced-sodium chicken broth

pounds sweet potatoes, peeled and cut into 1-inch cubes

cups cooked turkey, cut into 1/2-inch cubes

teaspoon salt

cups frozen corn
Fresh cilantro (optional)
*Jalapeño peppers can sting and irritate the skin; wear rubber or plastic gloves when handling peppers and do not touch eyes. Wash hands after handling.
In 5-quart saucepan over medium-high heat, cook and stir onion and jalapeño pepper in margarine 5 minutes or until onion is soft. Add broth, potatoes, turkey and salt; bring to a boil. Reduce heat to low; cover and simmer 20 to 25 minutes or until potatoes are tender. Stir in corn. Increase heat to medium and cook 5 to 6 minutes.
To serve, spoon 1 cup soup into bowl and garnish with cilantro, if desired.
