Broiled Vegetable Focaccia

Ingredients

(6-inch) prepared Italian pizza crusts (4 ounces each)

tablespoons French's® Honey Dijon Mustard
|
|
3
|
tablespoons reduced-fat mayonnaise
|
|
1
|
teaspoon dried basil leaves or 1 tablespoon minced fresh basil
|
|
1
|
red bell pepper, coarsely chopped
|
|
1
|
yellow squash, coarsely chopped
|
|
1
|
zucchini, coarsely chopped
|
|
1/4
|
cup grated Parmesan cheese
|
|
|
|
|

1. Preheat broiler. Place crusts in broiler pan. Heat 1 minute or until toasted. Transfer to work surface. Combine mustard, mayonnaise and basil. Spread evenly on top of crusts.

2. Toss vegetables with 2 tablespoons oil and 1/2 teaspoon salt. Place on broiling pan. Broil 6 inches from heat 10 minutes or until vegetables are crisp-tender and slightly charred, turning once.

3. Arrange vegetables on top of prepared crusts. Sprinkle with cheese. Heat under broiler 1 minute or until cheese turns golden.
