Vegetable Pasta Italiano
Makes 6 servings
Ingredients
1/2 pound lean ground turkey
1 red bell pepper, seeded, sliced
1 tablespoon paprika
1 can (14-1/2 ounces) crushed tomatoes
1 can (14-1/2 ounces) reduced sodium chicken broth
2 cups uncooked bow tie pasta
2 cups DOLE® Broccoli, cut into florets
1 cup DOLE® Cauliflower, cut into florets
  Savory Topping (recipe follows)
   
In 12-inch nonstick skillet, brown turkey 2 minutes.
Stir in red pepper strips and paprika. Reduce heat to low, stirring 2 minutes longer.
Stir in tomatoes, chicken broth and pasta. Bring to a boil. Reduce heat to low, cover and simmer 15 minutes. Arrange broccoli and cauliflower on top. Cover, simmer 10 minutes or until pasta is soft.
Sprinkle with Savory Topping. Let stand 3 minutes before serving.
Savory Topping
 
Ingredients
1/4 cup seasoned dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup minced parsley
   
Combine all ingredients in small bowl; mix well.
