to 3 tablespoons minced fresh mint or 1/2 teaspoon dried mint

medium red onion, thinly sliced

1. Season meat with salt and pepper, if desired.
2. Heat 1 tablespoon oil over medium-high heat in large skillet. Add meat; cook about 4 minutes on each side or until desired doneness. Cut meat crosswise into thin slices.
3. Drain tomatoes, reserving 1/3 cup liquid. Combine reserved liquid with vinegar, mint and remaining 2 tablespoons oil.
4. Toss meat slices, tomatoes and onion with dressing. Arrange over lettuce; top with cheese. Garnish, if desired.
Variation
Grill lamb over hot coals instead of pan-frying.
