A vinaigrette is a mixture of oil, vinegar and sometimes seasonings or fresh herbs. It is used primarily as a dressing for salads. It may also be served over chilled meat, fish or vegetables or used as a marinade. Considered one of the classic sauces of French cuisine, a traditional vinaigrette is made with three parts oil to one part vinegar.
