Polenta, an integral part of Northern Italian cuisine, is made from cornmeal. It is prepared by cooking cornmeal and water together to a thick spoonable consistency. Americans would call this dish "mush." It may be served as a hot cereal or side dish with butter and sometimes Parmesan cheese. When allowed to cool and become firm, it can be sliced or cut into squares and fried, broiled or baked. Fried polenta is usually eaten as a first course or a side dish often topped with tomato sauce or a mushroom or other vegetable mixture.
