Lard is a firm, snowy white fat obtained from rendered pork fat. Although it is high in saturated fat and cholesterol, and therefore has fallen out of favor in the United States, it is integral to many ethnic cuisines, including Mexican and Chinese. It is excellent for pastry crusts, biscuits and deep-frying.
